Two Ingredient Mango Ice Cream

I’m always looking for recipes that are both easy to make and delicious. This certainly fits the bill.

The inspiration comes from Nourishing Treasures’ Peach Ice Cream.  I used cream instead of whipped cream to simplify the process. I tried the recipe with peaches, but I found it wasn’t sweet enough for me. However the strong flavor and natural sweetness of the mango was enough to make it work with just the cream. No doubt some other kinds of fruit would work as well.

Here’s how to make it:

Ingredients for two servings:

2 mangos

8 – 10 tbsp. of cream

Method

1. The day before, cut up the mango and freeze it.


Frozen Mango

2. Using a food processor, blend the fruit until it’s in small granules.



3. Add cream and process further until smooth. Don’t over process the cream or it will start to turn into butter.

Serve immediately. Enjoy!

I make this before using frozen mango, cream and a pinch of stevia extract. It's soooo good and addicting!
